Tuesday at the Table

Random question: Do you know Nanaimo Bars?? According to Wikipedia, "The Nanaimo bar is a dessert item of Canadian origin popular across North America. It is a bar cookie which requires no baking and is named after the West Coast city of Nanaimo, British Columbia. It consists of a wafer crumb-based layer topped by a layer of light vanilla or custard flavoured butter icing which is covered with melted chocolate made from chocolate squares. Many varieties exist, consisting of different types of crumb with different flavours of icing (e.g., mint, peanut butter) and different types of chocolate. Two popular variations on the traditional Nanaimo bar involve mint- or mocha-flavoured icing."

Ok, so if that's an official(ish) definition, my one word description is, "Yum."

And I have made them on numerous occasions  usually the original recipe, but also those mint and mocha flavored, and even peanut butter.

Well, it's my coworker's birthday today, and she looooves Nanaimo Bars. But this year, I went out on a limb  and tried another twist . . .


And that would be Nanaimo Bar Cheesecake. Thanks to Jo and Sue who shared the recipe on their blog, and also included the recipe for the original bars. I did make one change to my cheesecake - using the bar portion of the recipe for the cheesecake base, because really, it's that graham + coconut + cocoa base that makes a Nanaimo Bar a Nanaimo Bar for me.

Meanwhile, it IS fall, and I'm really hoping you have some fall recipes to share and of course some fall projects. Here's a little one I pulled out last night for the new season.

  3. I hang out in Nanaimo in the summers, the ferry to my island starts at Nanaimo. My mom used to make the bars every Christmas, the cake sounds yummy.

  4. Nanaimo Bars are my husband's favourite! Since he had his first one three years ago anyway. Might have to try the cheesecake now :)

  6. Ahhh, my lovely city, Nanaimo. :) Can't say we eat a ton of Nanaimo bars here though, unfortunately. Once in a while, so even though we live in its namesake city, it's still a treat for us!

  10. missed the nanaimo bars when we stopped in on our boating treks, but enjoyed the stopss there anyway. like your pumpkin runner, too. and didn't do a very good job of posting my pumpkin bread recipe.
